There are several ways that dried mushrooms can degrade over time. Moisture infiltration is one of the main offenders. Your dried mushrooms may become patched with mould if they become overly wet. At first glance, these might appear as lighter patches on a dark mushroom. Throw away any mouldy mushrooms right away.
Typically, it would be best to rehydrate dried mushrooms before using them in recipes. Rehydrating them entails doing so, usually with hot water or broth. The water can be heated on the stove and then poured over the mushrooms after being combined with the liquid and microwaved.
The type of mushroom and the size of the pieces it has been cut or broken into will determine how long it takes to reconstitute them. It usually takes 10 to 30 minutes to rehydrate dried mushrooms.
Depending on how they are used, dried mushrooms are just as good as fresh ones. Shiitake mushrooms, for example, concentrate their flavour and have an even meatier texture after being reconstituted than fresh mushrooms. Fresh and dried morels can be used interchangeably. While dried porcini mushrooms that have been reconstituted may lose some of their lovely buttery texture, they do produce a soaking liquid that is beautifully flavoured and a beautiful addition to soups and sauces.

Yes, dried mushrooms have been a source of medicinal value since ancient times and have been useful for many ailments. Medicines are usually effective, but their long-term side effects have been detrimental to health. The anti-oxidative properties of dried mushrooms have proven to be useful.
First, even though the mushrooms are dried, you should still wash them. Taste your dried mushrooms as you would fresh ones, preferably. If gritty, wash the quantity you intend to use. If you want to use the mushrooms in your dish after reconstituting them, discard the frequently chewy stems.
